The Timorasso Derthona Colli Tortonesi DOC is an impressive white wine that captures the unique character of the Colli Tortonesi right down to the glass. This wine is made from 100% Timorasso, a native grape that has experienced a remarkable renaissance in recent decades and is now known as the "white Barolo" - a nickname that refers to its powerful structure, ripening potential and distinct terroir expression. The grapes are harvested by hand on south-west facing slopes, at an altitude of 300 metres, where clay soil and limestone combine for complexity and elegance.
Gentle pressing is followed by controlled fermentation and maturation on fine yeast, lasting at least 12 months. The result is a straw yellow wine with a delicate and intense aroma, bringing together ripe yellow fruit, white flowers and mineral notes. On the palate, it is rich, mineral and layered, with flavours of ripe plum and a subtle hint of toasted almond in the long, elegant finish.
This wine is versatile at the table: it effortlessly accompanies a full meal and comes into its own beautifully alongside mature cheeses, white meats, pâtés and refined vegetarian dishes. And those who venture to pair it with Piedmontese white truffle will notice how perfectly Timorasso enhances the earthy, intense flavours of this culinary gold.
