'Mon Cavarè' Timorasso Metodo Classico is an exceptional sparkling wine that showcases the rare Timorasso grape in a whole new way. Sourced from southwest-oriented vineyards at 300 metres altitude, on clay soils over grey limestone, this spumante is made from 30-year-old vines that guarantee low yields but deliver high aromatic concentration. The grapes are harvested by hand in early September and carefully processed.
After gentle pressing and temperature-controlled fermentation, the wine matures on fine yeast, after which it continues to mature in bottle for another 24 months according to the méthode traditionnelle. This creates a refined mousse and a rich aromatic profile. In the glass, 'Mon Cavarè' shows with a bright straw yellow colour and a bouquet reminiscent of flowers, freshly baked bread crust and delicate yeast aromas. On the palate, it is dry, fresh and elegant, with nice acidity and a subtle mineral touch typical of the Colli Tortonesi terroir.
This elegant Timorasso Spumante is ideally suited as an aperitif, but also goes beautifully with refined starters and fish dishes. Thanks to its balance and structure, it can even accompany a full meal. A unique expression of Timorasso, sparkling with character and class.
