The Polvaro Prosecco Brut D.O.C. is a fresh and lively sparkling wine made from 100% Glera, from Tenuta Polvaro in the historic Lison Classico zone near Venice. Compared to the Extra Dry, the Brut shows a distinctly drier style with lively acidity, making it ideally suited to pairings with seafood and fried dishes. The vineyards lie on well-draining clay-limestone soils and benefit from the mild climate between the Dolomites and the Adriatic Sea.
After gentle pressing and cold static settling, the wine ferments for 8 to 10 days at 18°C, followed by 60 days of ageing using the longer Charmat method. In the glass, it shows a bright straw yellow with a fine and persistent pearl finish. The bouquet is delicate with notes of white flowers, green apple and pear. On the palate, it is dry and fresh, with lively acidity that makes the wine particularly refreshing and versatile.
The ideal companion to seafood appetisers, fried fish and grilled seafood, but equally enjoyable as a pure aperitif.
