Product description
The 8 Vírgenes 2024 is an ambitious white blend from Bodega y Viñedos La Zorra, made from several grape varieties sourced from six different vineyards in the Sierra de Salamanca. The grapes are harvested early, in the first week of September, to preserve their freshness and keep the alcohol content low. After destemming and crushing, the must is cooled to 7°C and transferred to vats, followed by three days’ maceration on the skins and vertical pressing using a pneumatic balloon press to prevent oxidation.
The must ferments spontaneously on its own yeasts at a temperature below 13°C to preserve the varietal character of the grapes as much as possible. The wine remains on the fine lees until spring, with weekly stirring using CO₂, which contributes to its full body and structure. The wine is bottled unfiltered (and ‘rama’).
In the glass, the 8 Vírgenes displays a beautiful straw-yellow colour. On the nose, it is intense and complex: ripe fruit, floral nuances, herbs and subtle yeast notes. On the palate, it is full-bodied, flavourful and aromatic, rich and long-lasting, with a lively, fresh acidity.
