Pratalia takes its name from the 8th-century Veronese riddle, a text written in a language that is no longer Latin but not yet Italian either. The name refers to sunny fields, and that is precisely where Cantina Santoiolo’s Vermentino vines grow: on a south-south-west-facing hillside in Narni, on soil that was once the seabed three million years ago. That layer of fossilised shells in the clay is the key to this exceptional white wine.
The grapes are harvested at sunrise, immediately destemmed in the presence of dry ice to keep the temperature low, and then macerated on the skins for 24 hours at 8 degrees. After gentle pressing, the wine ferments in stainless steel at a controlled temperature and matures on its fine lees. In the glass, Pratalia is a clear straw-yellow with a glistening sheen. The nose is immediate and aromatic: white flowers, green herbs and citrus. On the palate, the wine is exceptionally fresh and juicy, with an almost salty character, and a long, almond-like finish. That briny, mineral profile is purely the work of the sea that once lay here.
Pratalia pairs excellently with all fish dishes, vegetable dishes, exotic and spicy dishes, and as an aperitif. A classic pairing: spaghetti with anchovies and breadcrumbs. Serve chilled at 10–12°C.
