Ribolla Gialla was rediscovered in the 1990s and has since become one of the region’s most distinctive grape varieties. This is a wine with a distinct character: not broad and rich, but precise and mineral, with a fresh directness that makes it instantly recognisable as a product of the Colli Orientali.
After harvesting and destemming, the wine ferments and matures entirely in stainless steel for six months, followed by two months’ rest in the bottle. Pale yellow in the glass. The nose offers fresh hawthorn and wisteria, complemented by warmer notes of yellow plum and citron. On the palate, it is dry, fresh and balanced, with pronounced minerality that betrays its ponca origins.
Particularly suitable as an aperitif with cold meats and cheeses, but also excellent with fish dishes. Serve at 10–12°C.
