ICHORE is a deep ruby red wine of exceptional intensity and character, from Cantine Miali's Selezioni Speciali. This 100% Negroamaro is the result of careful selection and artisanal craftsmanship. The aroma is rich in spicy notes, with pronounced hints of black pepper and juniper, foreshadowing the power and depth in the glass. On the palate, the wine is full and round, with a firm structure perfectly balanced by silky tannins and a velvety finish.
The grapes are harvested manually in the third week of September. After gentle destemming and bruising, the wine undergoes a controlled 12-day fermentation in stainless steel tanks. It then matures further in steel, with micro-oxygenation in 10-year-old tonneaux of French oak, and rests in bottle for a further six months to refine its complexity.
With an alcohol content of 13-13.5% and total acidity of 6 g/l, ICHORE is the ideal companion to roasted or stuffed meats, barbecues or rich, flavoursome dishes. Serve this wine at 18°C for the best experience of its soft power and Mediterranean elegance.
