3x 'Cascina Cabonaldo' Brachetto d'Acqui DOCG is a sweet red wine made from Brachetto grapes. This is one of the most characteristic wines from the Gallo family cellar. The grapes are harvested by hand in early September and undergo a short maceration on the skins to extract the intense ruby ​​red color and characteristic aromas. Fermentation is then stopped by filtration and cooling, after which the wine develops its delicate bubbles in an autoclave to an alcohol percentage of 5.5%. The wine has a lively mousse, pronounced floral and fruity aromas, and a perfect balance between sweetness and freshness.

3x 'Cascina Cabonaldo' Moscato d'Asti DOCG is a refined, aromatic sweet wine made from 100% Moscato grapes. For centuries, Moscato has been considered the true gold of the region in the sunny hills of Montabone in Piedmont, yielding wines of exceptional quality every year. The grapes are carefully harvested by hand in the first weeks of September, with only the best rows selected to produce this prestigious Moscato. After gentle pressing, the juice is filtered and immediately cooled to preserve the delicate aromas of the grape. Alcoholic fermentation takes place in autoclaves at a controlled temperature, never exceeding 18°C, until the wine reaches an alcohol percentage of at least 4.5%.
