M' 2023 is Domaine du Météore's most exclusive cuvée and is only made in exceptional vintages, with an edition of only 600 bottles. The vineyards lie above an ancient meteorite crater at around 300 metres above sea level, where the vines are rooted in schist soils with inclusions of iron and nickel from the impact. This extreme terroir creates a distinct minerality, tension and a unique, almost earthy depth in the wine.
The wine is made from 100% Syrah, grown organically and biodynamically, with manual harvesting and careful selection of grapes. Fermentation takes place entirely in new 500-litre Burgundy oak barrels, followed by a meticulous 24-month ageing process. This intensive but refined vinification creates a perfect balance between power and elegance, with the wood supporting the wine without overpowering the terroir.
In the glass, 'M' 2023 shows an intense purple colour with a powerful nose of star anise, clove, candied orange peel and spicy dark fruits. On the palate, the wine is elegant and perfectly balanced, with silky tannins and a long, refined finish that lingers for a long time.
