On the palate, the wine shows surprisingly lively freshness and uncomplicated drinkability, with plenty of juicy fruit and a fine structure that comes from spontaneous fermentation on the skins. The grapes are harvested entirely by hand and spontaneously fermented in open vats for 10 to 15 days, with the skins being regularly manually underpinned. The wine then matures for several months on full lees in used barriques, giving it subtlety, depth and softness. As it is bottled unfiltered and with minimal sulphur, it retains its authentic, natural expression.
