Torre di Ceparano is the concentrated, serious interpretation of Sangiovese at Fattoria Zerbina. Sourced from steep, chalky slopes around Ceparano and Montignano, where grapes on alberello vines are kept low in yield. Fermentation with longer skin aging builds structure, then ageing in French oak (with a small component of American oak) adds depth and complexity without overpowering the fruit. The result is a Riserva with power, precision and storage potential.
In the glass, the wine shows depth and concentration. On the palate, you taste ripe red and dark fruit, spicy accents and a subtle wood touch that is nicely intertwined with the structure. The tannins are firm but refined, while the acids keep the wine lively and balanced. This is a Sangiovese that already impresses, but will gain further length and layering with bottle ageing.
At the table, Torre di Ceparano goes beautifully with game dishes, slow-cooked beef or lamb and rich stews. It also shows its power and elegance with more mature cheeses. A wine for moments when you take your time.
