The Weisser Burgunder Hôpital 2023 comes from a special limestone quarry in the Schweigener Sonnenberg vineyard just across the French border. The chalky soil gives the wine its refined structure, tension and precise minerality. The grapes were selected entirely by hand and given a 15-hour maceration before being gently pressed in the traditional Korbpresse. This careful process creates a particularly pure must that is the basis for this wine's elegant style.
After pressing, the young wine was transferred via drop pressure to stainless steel tanks and oak barrels, where it fermented spontaneously without any additives. It was bottled unaged, fully preserving its natural texture and aromatic depth. The Hôpital 2023 is a vegan Deutscher Prädikatswein trocken with 12% alcohol, 7.0 g/l residual sweetness and 5.1 g/l acidity, providing a harmonious balance of freshness, finesse and gentle roundness.
In the glass, the Weisser Burgunder Hôpital shows itself elegant and slightly creamy, with aromas of peach, juicy pear, citrus and a subtle floral tone, supported by a chalky minerality. The palate is bright, soft and precise, with fresh, well-integrated acidity and a refined, long finish. This versatile Weißburgunder pairs beautifully with dishes such as poultry, creamy pasta, lighter fish dishes, risotto with asparagus or soft cheeses. Serve between 7 and 12 °C to fully appreciate its freshness and elegant structure.
