Product description
On the steep slopes of the Kestener Herrenberg, Ouessant sheep – the smallest breed of sheep in the world – roam freely. They keep the grass short amongst the vines and are experts at escaping. In fact, they do exactly what the name of this wine promises: they’re naughty. That cheerful character is the inspiration for Bad Behaviour, a Pet-Nat made from Bacchus grapes planted in 1971, on a plot of just 0.13 hectares that yields only around 300 to 400 litres annually.
The grapes are hand-picked and pressed immediately, without skin contact. The wine ferments spontaneously in stainless-steel tanks and is bottled in November whilst still on the lees, after which it develops its bubbles naturally in the bottle. No added sulphites, unfiltered and 100% vegan. After six months’ ageing on fine lees, the wine is disgorged on request to ensure maximum freshness. In the glass, Bad Behaviour is slightly cloudy and sparkling. The nose is expressive and aromatic: elderflower, exotic fruit and a fresh, slightly bitter note that gives the wine just that touch of quirkiness. On the palate, it is dry, lively and pleasant with a light chalky texture and a hint of citrus and quince.
This is a wine for moments when you let go of the rules for a while. It pairs well with Vietnamese spring rolls packed with coriander, fried feta cheese with honey and thyme, or crispy fried Padrón peppers. Serve well chilled at 6–8°C.
