La Résistance is a quiet wine with a loud message. It is Grandbois’s liquid protest against the industrial standardisation of taste: no polished surfaces, no calculated perfection, but depth and an authentic origin from the steep slopes of the Moselle. The name refers to resistance, and that character is also evident in the glass. This is a Riesling that does not conform to expectations.
The wine ferments spontaneously with wild yeasts and derives its clarity and distinctive character from a long rest on the lees. No filtration, no fining, minimal sulphur. Aged in stainless steel, which preserves the pure, unadulterated fruit and the cool freshness of the Moselle. In the glass, it is clear and pale yellow with a lively sheen. The wild yeasts give it a fascinating texture and juiciness that you don’t often find in a conventional Riesling. The nose is direct and precise: wild herbs, a hint of yeast and the cool, smoky slate minerality of the Maringer Sundial. On the palate, it is fresh, lively and dry, with a pleasant grip and a long, mineral finish.
A wine for dishes with character. It pairs excellently with crispy oven-roasted herb-crusted chicken, baked artichokes or a rich quiche with leeks and goat’s cheese. Serve at 9–11°C.
