The Colline Novaresi DOC Bianco 2020 is a white wine from a unique 0.8-hectare vineyard in Valle Ceresole, Briona, Piedmont, Italy, at 280 meters altitude. Made according to the Colline Novaresi DOC rules, the grapes grow on a clay-rich, medium-structured soil with the Guyot system and careful, integrated farming methods. Harvested by hand in crates in early September, this wine is a pure expression of its terroir.
This wine is vinified in stainless steel tanks with a gentle pressing of the must for better extraction, followed by controlled fermentation and cold stabilization in winter without chemical additives. It matures further in the bottle after bottling in March or April. With its intense golden-yellow color and soft reflections, it has an alcohol content of 13.5%, giving it a strong yet refined personality.
Its scent is herbal with notes of wildflowers, a bouquet that radiates freshness and natural elegance. On the tongue, it starts subtle, with good persistence and a light, savory finish that lingers. Perfect with appetizers, legumes, and white meats; serve it at 8-10 °C in a Bordeaux bottle with a natural cork and enjoy its harmonious balance.
