The Colline Novaresi DOC Vespolina 2023 is a pure expression of the Vespolina, a rare indigenous grape variety from Alto Piemonte. It comes from the Maretta vineyard, situated at an altitude of 290 metres on clay soils, with vines averaging 25 years of age. After destemming, the wine undergoes spontaneous fermentation using the ‘pied de cuve’ method without temperature control, with a 10-day maceration on the skins. Following spontaneous malolactic fermentation, the wine matures in stainless steel. Sulphite content below 15 mg/L, unfiltered. Recommendation: uncork at least half an hour before serving.
In the glass, the Vespolina displays a deep colour ranging from purple to intense ruby. The nose is spicy and pronounced, with notes of black pepper, liquorice and flowers. On the palate, the wine is crisp, flavourful and persistent, with a lively freshness that invites you to take another sip.
The Vespolina is a true food wine that really comes into its own at the table. It pairs excellently with cured meats such as salami and ham, hearty pasta dishes such as tagliatelle with meat sauce or risotto with sausages, and savoury vegetable soups. It also pairs beautifully with herb-crusted grilled chicken or a simple but tasty cheese platter. Uncork it well in advance of serving for the best result.
