The Ghemme DOCG 2022 is Quarna’s top cuvée, the estate’s most prestigious wine and one of the great red wines of Northern Italy. Made from Nebbiolo (90%) and Vespolina (10%) from the Maretta vineyard at an altitude of 290 metres, with vines averaging 50 years old on clay soils. After destemming, the wine undergoes spontaneous fermentation using the ‘pied de cuve’ technique without temperature control, with a long maceration of 30 days on the skins. Following spontaneous malolactic fermentation, the wine is aged for 24 months in 10-hectolitre oak casks. Sulphite content below 15 mg/L, unfiltered. Recommendation: uncork at least half an hour before serving, pour gently and preferably decant.
In the glass, the Ghemme displays a ruby red colour with garnet highlights. The nose is elegant and complex, with notes of dark red fruit, herbs and tobacco that reflect the long ageing and the vigour of the old vines. On the palate, the wine is full-bodied and robust, with a long, warm finish.
The Ghemme DOCG is a wine for special occasions and fine dining. It shines alongside a wild boar or venison stew, a classic ossobuco, or a rib of beef. Mushrooms and truffles beautifully enhance its earthy character. To round off a festive dinner, it also pairs excellently with mature cheeses such as aged Parmigiano or pecorino, or with a piece of dark chocolate.
