The Pouilly-Fumé Cuvée Silex is Domaine Renaud's most terroir-driven wine, from old Sauvignon Blanc vines deeply rooted in flint and clay-limestone soils on the Saint-Andelain hills. These unique flint soils give the wine its distinctive tension, smoky touch and impressive minerality. It is a pure expression of the terroir for which Pouilly-Fumé is known worldwide, with a style that flawlessly combines power and finesse.
After harvesting, the wine matures for six months on fine groin in stainless steel vats, adding depth, texture and aromatic complexity without losing the sleek, pure character of Sauvignon Blanc. The combination of flint, cool winds of the Loire and precise vinification results in a wine with pronounced precision, elegant structure and a long, mineral finish. Young, it is lively and expressive, but after three to five years of bottle aging, it reveals even more layering and finesse.
On the nose and palate, the Cuvée Silex shows aromas of citrus, white peach, subtle spices and a characteristic flint smoke that makes the terroir instantly recognisable. The palate is tight, energetic and crystal clear, carried by lively acidity and a mineral tension that lingers for a long time. This wine pairs brilliantly with seafood, smoked or cured salmon, goat cheese such as Crottin de Chavignol and refined fish dishes. Serve chilled to fully appreciate its precision and mineral freshness.
