"Le Diacce" is a powerful and refined red wine from Podere Ciona, born from the special combination of 97% Merlot and 3% Alicante Bouschet. The grapes grow at an altitude between 490 and 550 metres above sea level on soils composed of a mix of sandstone (quartz arenite), clay yeast and marl. This rich subsoil contributes to the wine's structure and depth. The low yield per plant emphasises quality over quantity, resulting in a concentrated and expressive wine.
Vinification takes place in 30-hectolitre French oak barrels, with alcoholic fermentation lasting about 10 days. This is followed by a long maceration on the skins of 30 to 35 days to obtain maximum extraction of colour, aromas and tannins. Malolactic fermentation takes place in 225-litre barriques, followed by a 24-month maturation in French oak, 10% of which is new and the rest second and third pass. The wine then matures for at least another 12 months in bottle before being released on the market.
In the glass, Le Diacce shows deep purple-red. The aroma is complex and inviting, with notes of spices, chocolate and toasted nuts. On the palate, it is rich and intense with flavours of wild berries, a firm structure and a long, concentrated finish. Serve this wine at 18 to 20 °C and open the bottle at least an hour before pouring. Le Diacce is an ideal companion to grilled and roasted red meat, game dishes, mature cheeses and refined Tuscan meals. A wine with power as well as elegance, perfect for special occasions.
