The Ser Paolo IGT Toscana from Fattoria Valacchi is an elegant and characterful red wine made entirely from the indigenous Tuscan grape Canaiolo. This ancient variety, once a constant companion to Sangiovese in classic Chianti blends, shines here in its purest form. The grapes are harvested by hand at the end of September and carefully selected to use only the ripest bunches. A cold maceration at temperatures below 12Ā°C to preserve aromatic freshness is followed by a 30-day fermentation in stainless steel tanks. The wine then remains on fine lees for sixty days to develop additional complexity, after which it ages for 12 months in 500-litre new French oak tonneaux and refines for a further six months in bottle.
In the glass, the Ser Paolo shows a deep ruby colour. The nose is intense and inviting, with aromas of blueberries, blackberries and a subtle hint of liquorice. On the palate, it is full and powerful, with rich notes of dark fruit, supported by a refined tannic structure that lends the wine elegance and depth. The balance between freshness and alcohol is perfectly balanced, resulting in a wine with a long, lingering finish. Ser Paolo is a tribute to Tuscan tradition, but with a modern precision that enhances its character.
The Ser Paolo IGT Toscana is an excellent companion to hearty Tuscan dishes, such as pasta with game or meat sauces, roasted red meat and wild boar or venison stews. Serve this wine at 18-20Ā°C and let it catch its breath for at least an hour before pouring. This will reveal its full complexity and elegant, silky texture - a pure expression of Fattoria Valacchi's Tuscan craftsmanship.
