The grapes are harvested by hand and given all the space they need to form their character. Without pressing, with a long skin soaking and fermentation in stainless steel, a deep, concentrated wine emerges. This is followed by a long rest in French oak, where the wine sheds its sharp edges and slowly builds complexity. In the glass, Pignolo shows intense ruby red, almost opaque, with aromas reminiscent of tobacco, cocoa and liquorice, intertwined with ripe dark fruit.

At the table, this wine calls for dishes with as much character as it has. Think grilled or braised meats, game, aged cheeses or a long evening where the bottle is allowed to drain slowly.
