Product description
Pignolo is not a wine in a hurry. In the hills of Friuli, this rare grape grows slowly and stubbornly, as if it already knows itself that time is its greatest ally. Dario Coos sees Pignolo as a promise to the future: a wine that is made today but will only really begin to tell its story years from now. It is a wine for patient lovers, for those who understand that sometimes power and finesse come together only after long silence.
The grapes are harvested by hand and given all the space they need to form their character. Without pressing, with a long skin soaking and fermentation in stainless steel, a deep, concentrated wine emerges. This is followed by a long rest in French oak, where the wine sheds its sharp edges and slowly builds complexity. In the glass, Pignolo shows intense ruby red, almost opaque, with aromas reminiscent of tobacco, cocoa and liquorice, intertwined with ripe dark fruit.
At the table, this wine calls for dishes with as much character as it has. Think grilled or braised meats, game, aged cheeses or a long evening where the bottle is allowed to drain slowly. This is not an everyman's friend, but a wine with a distinct personality. Those who give it time will be rewarded with depth, structure and an impressive length that lingers long after.
