Weingut Beth's Phönix Feinherb 2025 is an uncomplicated, fruit-driven white wine that responds perfectly to the pleasing, summery character of the Moselle. Sourced from vineyards around Kinheim, this wine combines the aromatic characteristics of the Phönix grape with a slight residual sweetness, placing it exactly between halbtrocken and lieblich. With its accessible style and soft structure, this is a wine that invites relaxed enjoyment.
On the nose, the Phönix Feinherb shows an open and friendly aroma profile with notes of ripe peach, yellow apple and a hint of tropical fruit. Unlike the tighter, drier Phönix Trocken, the emphasis here is more on juiciness and round fruit expression. The aroma is not complex or distinctly mineral, but rather charming and inviting, with a slight floral touch that makes the wine extra accessible.
On the tongue, the wine is soft, supple and slightly fruity-sweet, with mild acidity providing balance and freshness. The structure is loose and drinkable, making this Feinherb an ideal wine for informal moments. It comes into its own as a summer patio wine, with a barbecue, light salads, grilled chicken or spicy dishes.
