Ad Astra is a playful and quirky pét-nat that harks back to the charm of wines of yesteryear. This sparkling wine is made from 100% Minutolo and is produced using the ancestral method, whereby fermentation is completed in the bottle. The wine can be drunk either clear or slightly cloudy, depending on whether the natural yeasts are poured along with it. The vineyards are located at an altitude of 400 meters with southern exposure, where limestone and clay soils provide aromatic intensity and freshness.
After gentle pressing, slow fermentation takes place for fifteen days in stainless steel tanks at low temperature. The wine is then bottled while fermentation is still ongoing, which ensures a fine, natural sparkle. After two months of aging sur lie and at least six months of bottle aging, Ad Astra develops its characteristic balance between freshness, aroma, and soft mousse.
In the glass, Ad Astra displays a straw-yellow color with a slight haze. The aroma is distinctly aromatic, with notes of white peach, sugared almond, orange blossom, floral accents, and a subtle hint of honey. On the palate, the wine is lively and harmonious, carried by pleasant carbonation and creamy yeast notes. Served at around 10 degrees, this is an ideal aperitif wine, but it also pairs well with fish tartare, white meat, soft cheeses, and charcuterie.
