Minù is a distinctive and characterful interpretation of 100% Minutolo, made according to the macerata style, which focuses on prolonged skin contact. This centuries-old technique is perfectly suited to Minutolo and gives the wine its deep personality. The grapes grow at an altitude of 400 meters with southern exposure, on limestone and clay-rich soils, and are organically managed. The combination of long maceration, daily bâtonnage, and extreme care to avoid oxidation results in a white wine with structure, tension, and depth.
Fermentation takes place in stainless steel tanks at a controlled temperature, after which the wine remains in contact with the skins for no less than thirty days. Minù then matures for six months in steel and at least six months in the bottle. This approach enhances both the aromatic complexity and texture, without losing balance. The result is a wine that is both powerful and refined, clearly transcending the classic style.
In the glass, Minù displays a brilliant golden yellow color with amber nuances. The nose is rich and layered, with aromas of ripe apricot, raw honey, orange, tamarind, and balsamic accents. The palate is full and savory, with present but refined tannins and a pronounced mineral finish. Served at 10 to 13 degrees, this is a gastronomic wine that pairs beautifully with soups, aged cheeses, pasta with fish sauce, and roasted white meat, but also comes into its own as a meditation wine.
