Le Cervare Bianco Soave DOC is a characterful single vineyard wine that owes its soul to a special place: a small vineyard with centuries-old Garganega vines, located on the western flank of Monte Duello in Roncà, right next to an old farmhouse. This unique location on volcanic soil, at 180 to 220 metres above sea level, gives the wine not only structure and excitement, but also a deep connection to the past.
The grapes are harvested by hand in two stages - an early picking in early September and a later one in late October - followed by careful vinification. After a 96-hour cold skin soaking, the must is fermented on natural yeasts, partly in cement (85%) and partly in French barrique (15%). The wine then matures for 22 months on the fine lees, adding depth, complexity and texture.
In the glass, Le Cervare shows a light lemon-yellow colour with subtle intensity. The bouquet opens with notes of citrus, peach and pear, accompanied by mineral hints of flint and sulphur. On the palate, it is full and layered, with lively acidity and salty, fresh undertones that balance it out. Spicy and floral notes in the finish make this wine an intriguing expression of terroir, tradition and dedication - a Soave of exceptional class.
