Fidelis Rosso IGT Veneto is an enchanting red wine born from the vineyards of Gambellara, located at 400 metres altitude in a hilly landscape of volcanic origin. Here, where nature still has free rein and butterflies and bees move among the vines, Merlot (80%) and Cabernet Sauvignon (20%) are grown with care according to the traditional pergola veronese system. The yield per hectare is limited to 25 quintals, which adds to the concentration and finesse of this wine.
After the manual harvest in October, Fidelis Rosso undergoes a long process of skin softening and fermentation in cement vats, using only indigenous yeasts from a carefully set up pied de cuve. The wine then matures for three years on its own yeasts, developing wonderful structure, depth of ageing and a distinct terroir expression. In the glass, it shows an intense ruby red colour with aromas of ripe forest fruits, spices, soft wood tones and a subtle mineral undertone.
Powerful yet elegant, Fidelis Rosso manages to combine depth with surprising freshness. The texture is full and soft, with velvety tannins and a long, harmonious finish.
