Vulcano 36 - Vino Spumante Monti Lessini DOC is a sparkling ode to the volcanic heritage of Monti Lessini. This refined spumante comes from 100% Durella grapes, grown on the steep slopes of Monte Calvarina, where the vineyards are rooted in pure basalt. The name '36' refers to the months of aging on yeasts, resulting in exceptional structure, tension and elegance.
The grapes are harvested by hand and undergo gentle pressing, followed by an initial fermentation with indigenous yeasts in stainless steel. This is followed by a second fermentation in bottle according to the Metodo Classico, with a long ageing of three years. This prolonged rest on the lie gives Vulcano 36 its distinctive character: a lively mousse, a refined mouthfeel and a layered aromatic profile.
In the glass, the wine presents itself bright straw yellow with fine, persistent bubbles. The bouquet opens with notes of citrus, ripe apple and white stone fruit, complemented by subtle hints of bread crust, flint and a delicate minerality. The palate is tight and dry, with refreshing acidity and an elegant, long finish. Vulcano 36 is the perfect choice for lovers of distinct, characterful sparkling wines - ideal as an aperitif or as an accompaniment to sophisticated seafood dishes.
