Fidelis Bianco IGT Veneto is a white wine with an almost mythical aura, coming from the hilly vineyards of Gambellara at an altitude of 400 metres. Here, on volcanic soils and guided by the traditional pergola veronese system, the Garganega grape grows in harmony with nature. The yield per hectare is low, which contributes to the wine's concentration and complexity. Harvesting takes place manually in October, after which a rigorous pied de cuve is used to raise indigenous yeasts - an approach that guarantees authenticity.
The vinification is as meticulous as it is characterful: after a lengthy skin soaking, the wine ferments in cement vats at controlled temperature for four months. Fidelis Bianco then ages for no less than three years on its own yeasts, resulting in a wine with great depth, a silky texture and a striking mineral character. Aromas of flowers, ripe yellow fruit and fine herbs come together in a harmonious whole, supported by fresh acidity and a slightly earthy touch.
Fidelis Bianco is not an everyday wine, but a rare expression of Garganega with soul. Lively and layered, it demands attentive enjoyment. Serve it around 13°C to bring out all its nuances.
