2x 'La Grande Chaume' Chablis 2023 is an elegant, mineral white wine. This Chardonnay comes from the historic Grande Chaume zone, located next to the Premier Cru vineyards Les Forneaux on the right bank of the Serein river. After alcoholic fermentation, the wine undergoes full malolactic fermentation. Subsequently, approximately 30% of the wine ages in 227-liter Burgundian oak barrels, while the remaining 70% ages in stainless steel tanks. This combination ensures a perfect balance between freshness, structure, and subtle complexity. On the palate, the wine is energetic yet round, with flavors of peach and hazelnut, supported by a salty freshness and the typical oyster shell aroma of Chablis. The finish is long, lively, and refined.
2x Chablis 2024 is a fresh, mineral Chardonnay. This wine comes from plots bordering the Premier Cru vineyards of Côte Neuve and Vaux-Noyers. After harvesting, the grapes are fermented in temperature-controlled stainless steel tanks. The wine undergoes full malolactic fermentation and ages entirely in steel, preserving the fresh style and pure character of Chablis. The nose opens with aromas of spring blossoms, white flowers, and ripe white fruit such as apple and peach. With some aeration, subtle notes of brioche and a mineral undertone emerge. On the palate, the wine is round and silky, with fresh citrus accents, lively acidity, and a long, precise finish.
'Mont de Milieu' Chablis Premier Cru 2023 is a prestigious, fresh white wine. This wine comes from one of the most prestigious Premier Cru vineyards in Chablis. This historic vineyard is situated on the right bank of the Serein river and enjoys a full southern exposure. Thanks to the sunny location, the grapes ripen optimally, while the famous Kimmeridgian limestone soils provide the pronounced minerality that defines great Chablis. The grapes are harvested by hand to select only the best fruit. After the harvest, the wine undergoes alcoholic fermentation without residual sugar, followed by full malolactic fermentation. Vinification and aging take place entirely in stainless steel tanks to preserve the pure expression of the terroir. On the palate, the wine combines ripeness with lively freshness and a pronounced mineral backbone. The long, saline finish perfectly reflects the character of this famous Premier Cru vineyard.
'Les Forneaux' Chablis Premier Cru 2023 is a fresh, mineral white wine from a small vineyard on the right bank of the Serein river. The vineyard has an average age of approximately fifty years and is maintained with care. The grapes are harvested by hand to select only the best fruit. After the harvest, the wine ferments without residual sugar and undergoes full malolactic fermentation. Vinification and aging take place entirely in stainless steel tanks, ensuring the pure expression of the terroir is preserved. The nose opens expressively with aromas of pear, vineyard peach, quince, and apricot, complemented by white flowers and fresh citrus. A pronounced minerality with hints of flint, iodine, and oyster shell gives the wine its classic Chablis character. On the palate, it is lively and crisp, with fresh acidity, an elegant structure, and a long, saline finish.
