Product description
The kestrel hovers above the Maringer Sundial, keeping a close watch on the terroir. That is the image from which this wine takes its name, and it suits it well. For the Kestrel, too, demands patience and precision. The grapes are harvested late, meaning that some of the bunches develop a touch of botrytis, the famous noble rot that concentrates flavours and adds depth. Yet this is no sweet wine: the Kestrel is consistently made dry, so that all that ripeness and complexity is transformed into flavour, not sugar.
The wine ferments slowly for over 30 days and is then aged for six months on the lees in a neutral 1,000-litre German Fuder. That large, old cask ensures gentle micro-oxidation without any influence from the wood, leaving the fine, mineral character of the slate soil completely intact. Unfiltered, 100% vegan and with minimal sulphur. In the glass, the Kestrel is clear and golden-yellow. The aroma is aristocratic and layered: ripe yellow fruits, a light hint of honey from the botrytis, and the cool, briny minerality that so characterises the Maringer Sundial. On the palate, it is full-bodied and well-structured, with a long, fascinating finish that continually reveals new nuances.
A wine that deserves ‘elevated everyday cuisine’, as Grandbois himself describes it. It pairs beautifully with grilled brioche with beurre blanc, a spicy Thai papaya salad or a well-matured mountain cheese. Serve at 10–12°C and take your time.
