Dono, which means ‘gift’ in Italian, is a special red wine from the organic Piombaia vineyard in Montalcino. It is made from 100% Sangiovese Grosso, the grape variety used for Brunello, and is classified as Toscana Rosso IGT. The grapes from the 2016 harvest were hand-picked into crates during the second half of October.
The wine underwent spontaneous fermentation in stainless-steel tanks without temperature control and without added sulphites, with sixty days of skin contact. It was then aged for 45 months in a large 30-hectolitre oak cask, followed by four years in the bottle. In the glass, it is an intense ruby red. The nose reveals undergrowth, red fruit and violets. On the palate, it is austere and elegant, with persistent, enveloping tannins.
This serious, elegant wine is at its best with game, grilled meats, roasts, dishes featuring porcini mushrooms and mature cheeses. Serve it at 18–20°C and allow it time to breathe in a decanter. A lovely bottle for a special occasion, or, as the name suggests, to give as a gift.
