    Product description

Macerato di Piombaia is a distinctive, organic red wine from Piombaia in Montalcino, made from 100% Sangiovese Grosso. The name refers to the particularly long maceration period. The grapes are hand-picked in small crates in mid-October. The wine is made without added yeasts or sulphites.

Vinification begins in uncooled stainless-steel tanks. The wine is then left to macerate for six months in amphorae, with 5 per cent of the stems and skins. This is followed by a month in stainless steel and natural stabilisation, fining and filtration in stainless-steel tanks outside the cellar. Finally, the wine matures for three years in the bottle. This results in a complex, characterful wine with plenty of structure.

Piombaia describes this as a ‘meditation wine’, to be savoured at a leisurely pace. At the table, it pairs well with dishes that are not too heavy or heavily spiced, such as pasta with ragù, grilled meat, semi-mature cheeses and cured meats. Serve it at 16–18°C and allow it to breathe for a while. Store the bottle in a cool, dark place, as no sulphites have been added.
