Mattinale Romagna Trebbiano DOC is a fresh and uncomplicated white wine made from 100% Trebbiano sourced from vineyards around Serra di Castel Bolognese at 180 metres altitude. Planted in 2017, the vines benefit from an open exposure that ensures pure ripeness and aromatic brightness. The grapes are harvested by hand in the second to third week of September, only when perfectly ripe and carefully selected.
A gentle pressing of whole bunches is followed by temperature-controlled fermentation at 12 to 14 degrees, after which the wine is cold-stabilised. Maturation takes place for two months in glass-lined concrete vats, a neutral environment that fully preserves the fresh and direct character of the Trebbiano. The wine is then bottled and rests further in bottle.
In the glass, Mattinale shows a bright straw yellow colour. The aroma is delicate and fresh, with notes of field flowers and wet grass. On the palate, the wine is dry and juicy, with lively freshness and a clean, invigorating finish. Served at 8 to 10 degrees, this is an ideal wine as an aperitif or with light dishes.
