'Originale' Catarratto Bianco

Estano's Originale Catarratto Bianco is a young, organic white wine that originated in the mineral-rich hills of Baglio Estano, near Mazara del Vallo in Sicily. This elegant wine has won its place in several starred restaurants thanks to its refined character and harmonious palette. Made from 100% organically grown Catarratto grapes, from clay soils at an altitude of around 650 metres above sea level, this wine offers a pure and authentic taste experience.

Harvesting begins in the last week of September, with the grapes carefully selected by hand. After picking, the berries are gently pressed and fermented in temperature-controlled stainless steel tanks. The wine is then aged in steel for three months to retain its freshness, followed by at least two months of bottle aging to fully bring out the flavours. This careful method results in a wine that is both fresh and refined, with a light straw yellow colour and pronounced notes of citrus and flowers. In the nose, aromas of lemon peel, orange blossom and jasmine are evident, while the palate is characterised by tangy acidity that is nicely balanced with full, rich fruit notes.

The Originale Catarratto Bianco is a versatile wine that pairs excellently with seafood, poultry, veal and grilled vegetables. This wine also comes into its own with soft goat's cheese and light fish dishes. The ideal serving temperature is between 10 and 12°C, which allows the wine to retain its fresh and lively character.
