Elena Catalano's Sannio Aglianico DOC is a characterful red wine from Benevento, made from 100% Aglianico, one of southern Italy's oldest and noblest grape varieties. The grapes are harvested in the second half of October and carefully destemmed, after which alcoholic fermentation takes place in stainless steel tanks at controlled temperatures between 25 and 28Ā°C. Regular over-pumping keeps the skins in contact with the must, which gives the wine its rich colour and full flavour.
After fermentation, the wine matures further in stainless steel, where it retains its freshness and its complex aromas develop further. In the glass, the Sannio Aglianico has a deep ruby red colour. The bouquet is intense and refined, with spicy notes that transition into ripe red fruit. On the palate, it is powerful but balanced, with a soft, lively structure and a harmonious finish that combines elegance and depth.
This wine is a wonderful accompaniment to classic dishes of Campanian cuisine, such as pasta with rich meat sauces, stews or grilled red meat. It also pairs excellently with mildly matured cheeses and fine salamis. The Sannio Aglianico DOC is a wine of character and refinement - already seductive when young, but with the potential to grow even more complex with age.
