Cabernet Sauvignon DOP Friuli Isonzo is a dry, elegant red wine shaped by a dry, windy terroir with gravelly soils rich in reddish clay, iron oxide, and aluminium. These unique conditions lend the wine its structure and mineral character. Made from 100% Cabernet Sauvignon, the vines are trained using the Guyot system and cultivated with integrated pest management focused on sustainability and low environmental impact. The harvest takes place in late September, when the grapes reach optimal ripeness.
After gentle destemming and light crushing, fermentation occurs in temperature-controlled stainless steel tanks. Frequent pump-overs over the course of about three weeks extract color, aroma, and structure from the skins. The wine is then racked and aged for twelve months, followed by bottle ageing in temperature-controlled rooms. In the glass, it displays a brilliant ruby red color. On the nose, the wine offers notes of small red fruits, with prominent blackberry and dark cherry, complemented by delicate herbal and spicy hints like vanilla and green pepper. A faint touch of vinosity adds vibrancy and complexity.
On the palate, this Cabernet Sauvignon is fresh and juicy, with soft, well-balanced structure and a clean, fruit-driven finish – thoroughly enjoyable and satisfying. It pairs excellently with pasta dishes featuring rich sauces, including game-based ragù, as well as a variety of red meat preparations. It also makes a fine match for moderately spicy chili or a 5–8 month aged Montasio cheese. Serve at 16–17 °C in a warm setting, and allow the wine to breathe slightly before enjoying to reveal its full aromatic potential.
