The Cumulus is Tenuta dei Mori’s approachable, accessible red wine. Named after the most recognisable cloud in the sky – large and exuberant in form yet friendly in character – the Cumulus is exactly that: a wine that invites, rather than intimidates. Here, the Umbrian character of Sangiovese meets the freshness of Refosco in a blend that offers a free and modern interpretation of the region’s tradition.
The Cumulus is a blend of 60% Sangiovese, 20% Alicante and 20% Refosco, sourced from vineyards in the process of converting to organic farming. The grapes are harvested by hand at the end of September and fermented on the skins at 25–28°C. After fermentation, the wine matures in stainless steel tanks, is bottled in March and left to age in the bottle for a further 1 to 2 months. Ruby red in the glass. The nose is rich and clean, dominated by cherry and plum fruit, complemented by spicy and slightly herbaceous notes. On the palate, it is dry, fresh and easy to drink.
A versatile red wine to pair with pasta, red meat, white meats and medium-mature cheeses. Serve at 15–16°C.
