Velum means ‘veil’, and this too is a type of cloud: a translucent, delicate mist that filters the light and gives the sky a soft pink glow. Just like this sparkling rosé made from Pinot Noir: a seductive pink colour, with a fine, persistent perlage and a light, elegant character. A wine that brightens up the day, whatever the occasion.
The Velum Rosé is made from 100% Pinot Noir from vineyards in the process of converting to organic farming, situated on the clay-rich silt soils of Villanova at an altitude of 250 metres. The grapes are harvested early, at the end of August, by hand into small crates, to preserve the aromas and fresh acidity. After gentle pressing, secondary fermentation takes place in an autoclave using the Charmat method. In the glass, it is a seductive pink with a fine, persistent effervescence. The nose is citrusy and fresh with a hint of strawberry. On the palate, it is fresh, light-bodied and inviting.
An ideal aperitif, but also excellent throughout a meal with light dishes, fish and mild cheeses. Serve chilled at 6–8°C.
