Sottosuolo is an elegant and expressive white wine made from 100% Turbiana grapes, from Pozzolengo. The clay and silt soil of the vineyard gives this wine a distinct mineral character, which is enhanced by careful vinification in stainless steel tanks. After fermentation, the wine matures for three months on fine lie, before further refining in bottle for another three months. This process creates a wine with beautiful complexity and structure, while maintaining freshness.
In the glass, Sottosuolo has a light straw yellow colour with green reflections. On the nose, it offers a seductive aroma of pineapple, almond, passion fruit and citrus, making for a lively and refreshing olfactory experience. On the palate, it is intense and persistent, with excellent acidity, notable salinity and a subtly mineral finish. This balance makes the wine not only pleasantly fresh, but also layered and refined.
Thanks to its versatility, Sottosuolo is an excellent choice as an accompaniment to a full meal. It comes out particularly well with seafood and grilled fish, where its freshness and mineral notes enhance the flavours of the dish. Served at a temperature of 10-12°C, it offers a perfect combination of freshness and depth, ideal for lovers of refined, characterful white wines.
