Thisbe is a characterful 100% Merlot, from Pozzolengo, where the combination of silty and sandy soils contributes to the unique expression of this wine. The grapes are carefully harvested by hand and vinified in cement tanks, where the wine matures for four months on fine lie. It then undergoes a refinement of at least two years in bottle, ensuring a balanced structure and impressive depth.
The wine presents itself in the glass with a deep ruby colour and subtle violet reflections. On the nose, Thisbe reveals an intriguing mix of spicy and slightly earthy notes, with distinct aromas of tobak and green pepper leaves, giving the wine a distinctive, intense fragrance. On the palate, it is soft and full-bodied, with a nice alcohol balance and firm, refined tannins that give the wine a pleasant freshness and long finish.
Thanks to its rich and structured character, Thisbe is an excellent companion to savoury meat dishes, such as grilled or braised meat dishes, but also comes out perfectly with rich pasta dishes and refined charcuterie. Served at a temperature of 16-18°C, its aromatic intensity is at its best.
