Sognante is a sophisticated sparkling wine from Pozzolengo, made from carefully selected white grapes that are harvested by hand and vinified in steel tanks. After an initial maturation of three months on fine lie, the wine undergoes a natural re-fermentation in the bottle, creating a delicate and refined mousse. The soil, rich in silt and clay, contributes to the minerality and freshness of this elegant wine.
The wine has a bright greenish colour and a fine, persistent bubble. On the nose, fresh aromas of lime and citrus emerge, accompanied by subtle notes of bread crust, which provide a refined complexity. On the tongue, Sognante is soft and enveloping, with a playful perlage, lively acidity and a pleasant creamy texture that makes for a harmonious and refreshing finish.
This sparkling wine is perfect as an aperitif, but also comes into its own with fried dishes and grilled fish. Its minerality and fresh character make it a versatile choice for lovers of sparkling wines with a refined structure. Serve chilled at 8-10°C to fully enjoy its lively flavour and elegant mousse.
