12 and 13 December: the ONWINE Winemakers’ Festival. Winemakers from all ONWINE countries are coming to the Netherlands to let you taste their best wines.
The Alta Langa DOCG Metodo Classico Extra Brut is an elegant sparkling wine from the heart of Piedmont, crafted by winemaker Silvia Pressenda. First released in 2021, this cuvée originates from a single vineyard located at 500 meters above sea level in Monforte d’Alba. The marl-rich soils and cool mountain climate bring freshness and refined minerality to the wine. Made from 100% Pinot Noir, it showcases a perfect balance between finesse and structure — a true expression of the unique Alta Langa terroir.
After gentle whole-bunch pressing, the first fermentation takes place in stainless steel tanks at 16–18°C for ten days. The second fermentation follows the traditional bottle-fermented method at around 14°C. The wine then ages on its lees for at least 30 months, creating a fine and persistent perlage and adding layers of complexity. A low dosage (3–6 g/l) preserves the pure and authentic character of the fruit.
In the glass, the Alta Langa Extra Brut reveals a bright straw-yellow color with a lively, continuous effervescence. The bouquet opens with notes of roasted nuts and dried fruits, followed by hints of citrus and fresh floral nuances. On the palate, it is vibrant and precise, with refreshing acidity and a silky texture that invites another sip. The finish is long, savory, and mineral-driven. Perfect as an aperitif or paired with oysters, seafood, sushi, or soft cheeses. Serve chilled at around 8°C.
