Cantine Miali's "Mater" is a powerful and refined red wine from their special Cru selection. This Primitivo is instantly recognisable by its deep ruby red colour with violet reflections, which turns into an elegant garnet-red hue after several years of ageing. In the nose, a seductive bouquet of ripe fruits, black cherries, subtle vanilla notes and a hint of toasted almond unfolds. The result is a wine with structure, a generous body and a lingering, fruity finish.
For this wine, Miali selects only over-ripe grapes that are harvested manually in the first half of September. After destemming and bruising, the berries undergo a prolonged skin maceration of about 15 days. Fermentation takes place under controlled temperature using délestage, which contributes to optimal extraction of colour and aroma. The wine then matures for 24 months in large Slavonian oak barrels (3000 litres), after which it undergoes further refinement in bottle for at least 12 months.
Thanks to its rich character and complex flavour structure, the Mater is an ideal accompaniment to roasted and braised meats, as well as aged cheeses. With an alcohol content of 14 to 14.5% and acidity of 5.5 to 6 g/l, this wine is best enjoyed at a serving temperature of 18°C. An impressive Primitivo that exudes both craftsmanship and tradition.
