'Sarsè' Barbera Colli Tortonesi DOC is a powerful and layered red wine, made from 100% Barbera sourced from carefully selected vineyards in the municipality of Casasco. The vines, on average 50 years old, take root in a soil of marl and clay, on slopes with east to south-west exposition between 250 and 300 metres altitude. This combination of age, soil and location produces grapes with distinct character and aromatic intensity.
After the manual harvest, the grapes undergo a classic 10- to 12-day fermentation in large vats, followed by aging in concrete tanks. The wine is then aged in oak barrels for at least six months, giving it extra structure and depth. The colour is intense ruby red with purple hues. In the nose, 'Sarsè' opens with ripe red and black fruit such as cherries and berries, which develops into a complex bouquet with almond notes with further maturation. On the palate, the wine is intense, full-bodied and harmonious, with a soft texture and nuances of cherry jam.
This Barbera is an excellent companion to classic meat dishes. Think braised beef, brasato or boiled meat - 'Sarsè' effortlessly holds its own with rich, savoury flavours, adding a refined, Piedmontese touch to any dish. A wine with depth, balance and a long finish.
