This 2018 Valpolicella Classico Superiore Bio is the most concentrated and expressive interpretation of fresh Valpolicella grapes. Originating from the classic area in Veneto, the grapes grow on south-facing, terraced hills around 300 metres altitude. The chalky soils with clay and fossil deposits give the wine structure and depth. The blend of 45% Corvina, 35% Corvinone and 20% Rondinella forms the backbone of a wine that combines power with elegance and freshness.
Vinification is done entirely according to natural principles, without the use of selected yeasts or technical interventions. Fermentation starts spontaneously with indigenous yeasts and partly takes place with whole bunches, adding extra complexity and tension. The wine macerates for about a month and then ages for at least 12 months in a combination of stainless steel and cement, followed by further bottle aging. The result is a deep ruby red wine with aromas of ripe red fruit, floral notes and subtle spiciness.
On the palate, this Superiore is full and structured, with fresh acids, refined tannins and a long, harmonious finish. It feels perfectly at home at the table and is versatile, from aged cheeses to red meat and more-bodied pastas. Served between 15 and 25 degrees, this wine shows its full layering and storage potential.
