This 2020 Valpolicella Classico Bio is an honest and fresh interpretation of Valpolicella as it was meant to be: nimble, pure and steeped in drinking pleasure. Originating from the classic heart of Valpolicella, the grapes grow on south-facing, terraced hills at around 300 metres altitude. The soil is rich in limestone and clay, with marine deposits that add tension and finesse. The blend of 45% Corvina, 35% Corvinone and 20% Rondinella gives the wine its typical balance of fruit, freshness and spiciness.
The wine is vinified completely naturally, without the use of selected yeasts or oenological interventions. Fermentation starts spontaneously with only native yeasts, using only the free-draining juice. This produces a wine that is light in colour, with bright aromas of red berries, cherries and subtle floral notes. On the palate, it is fresh, juicy and energetic, with a light structure and an invigorating finish that invites the next sip.
Thanks to its low alcohol and lively acidity, this Valpolicella Classico is an ideal wine for informal moments at the table. It is excellent with light dishes, summer lunches or simply as a glass on its own. Served between 10 and 20 degrees, it shows its fresh, uncomplicated character at its best.
