    Product description

    A Chardonnay from the Moselle? Almost as rare as a unicorn, and just as fascinating. The Unicorn Knight deliberately breaks with the cliché of the heavy, buttery Chardonnay and demonstrates what the steep slopes of the Moselle can do with this grape variety: fresh, precise and full of mineral energy.

    The grapes grow on the Maringer Honigberg, a steep slope that demands all the craftsmanship that characterises Grandbois. The wine ferments spontaneously with wild yeasts and matures in neutral 225-litre oak barrels. The oak does not impart the rich vanilla flavour you might expect, but instead creates a soft, silky texture through subtle micro-oxidation. No filters, no added substances and minimal sulphur. In the glass, the wine is clear and golden-yellow. The nose offers yellow apple, ripe lemon and a lovely, smoky minerality that immediately takes you back to the slate soil on which it grows. On the palate, it is powerful yet light on its feet, with lively acidity, a briny finish and a desire for the next sip.

    The Unicorn Knight is a wine for those who aren’t afraid of a bit of the unexpected. It pairs superbly with grilled scallops in brown butter, chicken in tarragon cream sauce or roasted cauliflower with tahini and lemon. Serve at 10–12°C and allow it to breathe for a while after opening.
