Product description
Extremo is a bold and expressive wine from Torelli’s cellar, crafted without added sulphites. It’s a blend of Barbera, Dolcetto, and Merlot grapes, with ratios varying by vintage. Fermentation uses native yeasts and no animal-derived agents, making the wine 100% vegan. Careful temperature control preserves grape typicity and delivers balance, structure, and a pleasant alcohol level.
Traditional vinification includes extended skin contact during alcoholic fermentation, lasting one to two weeks. After pressing, malolactic fermentation occurs at around 20 °C, followed by natural stabilization during the winter. Bottling takes place in summer; after one month in bottle, Extremo is ready to enjoy. If sulphite levels remain below 10 mg/l, the label reads “no added sulphites.”
Extremo pairs beautifully with spiced vegetable dishes, grilled mushrooms, or vegan lasagna. It also complements eggplant parmigiana or beetroot risotto. With its solid structure, it’s equally suited to lighter meats like veal or herb-seasoned chicken.
