Product description
Papotta by Abbazia San Giorgio is a rare and lively Pet-Nat (ancestral method) made from 100% Zibibbo grapes grown on the volcanic terraces of Pantelleria. Stimulated by spring pruning, the vines produce a second bloom, leading to a late October harvest. Fermentation starts naturally with wild yeasts and continues for five days on the skins. The wine is bottled before fermentation completes, capturing its gentle bubbles in the bottle. No filtration, fining, or added sulfites – just pure, unfiltered nature.
Papotta offers aromas of citrus, white flowers, and stone fruit. On the palate, it is dry, crisp, slightly salty, and effervescent – a fresh expression of its seaside terroir. After 18 months of bottle aging, it gains texture and depth, making it both playful and refined.
Perfect as an aperitif or paired with shellfish, fish dishes, vegetables, savory tarts, or light pizzas. Serve well chilled at 8–10 °C to enjoy the full charm of this natural Sicilian gem.
