Product description
Joe Pesk by Abbazia San Giorgio is a bold, skin-macerated natural wine made from 100% Zibibbo, sourced from a selection of over 90-year-old bush-trained vines grown in the alberello pantesco style—recognized as UNESCO World Heritage. The vineyard covers one hectare of volcanic soil, loose in structure and rich in micro-elements, managed with a biodynamic, chemical-free approach that honors natural balance.
Harvested by hand in mid-September, the grapes undergo spontaneous fermentation with indigenous yeasts. A long skin-contact maceration of over 60 days allows the wine to absorb deep pigments and aromas. Aging follows in chestnut barrels and amphorae for a total of one year. Joe Pesk is bottled unfined, unfiltered, and without added sulfur.
The nose reveals intense notes of peach, apricot, and honey. On the palate, it is fresh, dry, and layered, with flavors of yellow stone fruit, citrus, and a pleasant saline finish. Joe Pesk is an excellent gastronomic companion—perfect with fried fish, aged cheeses, spicy dishes, and hearty pasta. Serve at 13–14 °C to fully experience its depth and natural elegance.
